Ricotta fatta in casa | Homemade Ricotta

La ricetta, è vero, sul blog c'era già, quella supercollaudata di mamma, ma, complice l'acquisto di un interessante libro "  Creme, formaggi, burro e yogurt fatti in casa " - assolutamente consigliato - mi è tornata la voglia di sperimentare per provare nuove formule per creare formaggi e latticini.
Però, proprio per quanto riguarda la ricetta della ricotta, il libro è impreciso, infatti il prodotto che si ottiene con le istruzioni è la cagliata.
Che comunque è un passaggio fondamentale per ottenere la vera ricotta, quella che, come dice il nome, è cotta due volte, usando appunto il siero ottenuto precedentemente con la cagliata.

Per iniziare a prenderci la mano (e gusto) per l'autoproduzione latticini e formaggi,  questa è l'ideale, insieme a quella dello yogurt, perché non richiede né caglio né altri ingredienti particolari.

Consigli:
Ovviamente come tutte le cose vive e in fermento non sempre vi riusciranno uguali: sperimentate, come ho fatto io, cambiando marca e tipologia di latte (sconsiglio di usare quelli UHT, in quanto il trattamento a cui li sottopongono cambiano le proprietà di coagulazione). 
Privilegiate un latte intero, se volete una ricotta ricca, cremosa e spalmabile oppure quello parzialmente scremato con l'aggiunta di pochi cucchiai di panna.
Con un latte magro otterrete invece una ricotta più secca, adatta ad essere sbriciolata, che è quella che vedete in foto.
Potete aggiungere spezie ed erbe aromatiche fresche o secche per dare un sapore sempre diverso.
Buonissima servita con un filo d'olio o un buon aceto balsamico, perfetta su crostini di verdure o frutta (da provare con pere e miele o zucchine crude, con una spolverata di pepe nero).




Ingredienti:


Per la cagliata:

1 litro di latte intero fresco
due cucchiai di aceto di vino bianco (o di mele)

Per la ricotta:

Siero di latte ottenuto precedentemente
200ml di latte parz.scremato fresco
2 cucchiai di panna (facoltativo, se volete una ricotta più cremosa, da spalmare)
2 cucchiai di aceto di vino bianco (o di mele)
Sale (facoltativo)


Strumenti:

Un pentola con fondo spesso
Garze pulite e sterilizzate
Un colino


Come si fa:


Per fare la cagliata prendete una pentola con il fondo spesso, versateci il latte e scaldatelo fino a circa 80° (vi sarà utile un termometro da cucina ).
Aggiungete l'aceto e mescolate dolcemente, a fiamma bassa, facendo attenzione a non portare ad ebollizione. Inizieranno a formarsi i fiocchi di latte. Spegnete, coprite con il coperchio foderato con uno strofinaccio (per non far cadere le gocce della condensa) e lasciate riposare.
Raccogliete i fiocchi con la schiumarola, mettendoli in un colino a cui avrete messo una garza sterilizzata  (basta farla bollire qualche minuto in un pentolino di acqua).
Ricordatevi di raccogliere  il siero che ne colerà e di non buttare quello rimasto nella pentola.
Adesso potete dedicarvi a fare la ricotta.
Al siero ottenuto aggiungete il latte fresco  (ed eventualmente la panna) e riscaldate il tutto, mantenendo sempre gli 80°.
Aggiungete l'aceto e raggiunti i 90° gradi dovrebbe iniziare a coagulare.
Abbassate la fiamma senza mai portare ad ebollizione e quando  i fiocchi di latte si fanno consistenti prendeteli e procedete come per la cagliata.

The recipe was already on the blog, that  super proven by my mom, but,  few days ago I  bought an this book - definitely recommended - that has renewed my passion for experimentation cheese and dairy.
However, just as regards the ricotta recipe, the book is inaccurate, in fact the product which is obtained with the instructions is milk curd.
That however is a crucial step for the real ricotta cheese, the one that, as the italianname implies, is cooked twice, using precisely the serum obtained previously by made the curd.

Tips:
Experiment, as I did, by changing the brand and type of milk (do not recommend to use UHT milk, because the treatment  change the coagulation properties ).
Preferred whole milk, if you want a rich, creamy and spreadable ricotta or semi-skimmed milk by adding a few tablespoons of cream.
With a low-fat milk instead, you will get a more dry cheese, suitable to be crumbled, which is the one you see in the picture.
You can  add spices and fresh dried herbs  to give a always different flavors
Delicious served with a little olive oil or balsamic vinegar, perfect on toasted crostini with vegetables or fruit (try with pears and honey or raw zucchini, with a sprinkling of black pepper).


Ingredients:

For curd:

1 liter of fresh whole milk
two tablespoons of white wine vinegar (or apple)

For the ricotta:

Obtained previously Whey 
200ml of fresh milk
2 tablespoons cream (optional, if you want a more creamy cottage cheese, spreadable)
2 tablespoons white wine vinegar (or apple)
Salt (optional)

Instruments:

A pot with a thick bottom
Gauze cleaned and sterilized
A colander

Directions:

To make the curd take a pot with a thick bottom, pour the milk and heat up to about 80 degrees ( use a cooking thermometer).
Add the vinegar and stir gently over a low heat, being careful not to boil.
Start to form milk flakes.
Turn off, cover with lid lined with a cloth ( to prevent condensation drops) and let stand.
Gather up the flakes with a slotted spoon, put them in a colander in which you put a sterilized gauze (just boil it few minutes in a pan of water).
Remember to collect the serum that will run off and not to throw what was in the pot.
Now you can made ricotta.
Heat the serum, add fresh milk (and cream, if you use it) and  maintaining 80 °.
Add the vinegar and reached 90 degrees should begin to coagulate.
Reduce heat without bringing to a boil and when the flakes are ready, take them and proceed as for the curd.



In a future post I will reveal an alternative use of whey.

  1. Quel libro, ti dissi già su instagram, è una tentazione. Non ho ancora avuto modo di prenderlo, ma appena lo farò sono sicura che mi cimenterò anche con la produzione di latticini :) E' sempre una gran bella soddisfazione far da sé :D
